Easy Bunny Chow recipe in your kitchen

What is Bunny Chow?

Bunny Chow, affectionately known as “Bunny,” is a South African fast food dish consisting of a hollowed-out loaf of bread filled with delicious curry. Originating from the Indian community in Durban, this dish is not only packed with flavor but also represents a fusion of cultures, making it a perfect meal to enjoy with family and friends in your cozy kitchen.

Ingredients:

For the Curry:

  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1-2 green chilies, chopped (optional, for heat)
  • 1 lb (450g) chicken breast or thigh, cut into bite-sized pieces (can substitute with lamb, beef, or chickpeas for a vegetarian option)
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 can (14 oz/400g) diced tomatoes
  • 1 cup chicken broth (or vegetable broth for vegetarian)
  • 2 potatoes, peeled and diced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

For the Bunny Chow:

  • 1 large loaf of white bread (unsliced)
  • Butter (optional)

Instructions:

1. Prepare the Curry:

  • Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, ginger, and green chilies (if using). Sauté until the onions are soft and translucent.
  • Add the chicken pieces and cook until they are browned on all sides.
  • Stir in the curry powder, ground cumin, ground coriander, and turmeric. Cook for another minute to let the spices bloom.
  • Add the diced tomatoes and chicken broth. Bring to a simmer.
  • Add the diced potatoes, cover, and let it cook for about 20-25 minutes, or until the potatoes are tender and the curry has thickened. Season with salt and pepper to taste.

2. Prepare the Bread:

  • While the curry is simmering, cut the loaf of bread into quarters. Hollow out each quarter to create a bread bowl, leaving enough bread at the bottom to hold the curry. If you like, you can butter the inside of the bread for extra flavor.

3. Assemble the Bunny Chow:

  • Once the curry is ready, spoon it into the hollowed-out bread quarters.
  • Garnish with fresh cilantro and serve immediately.
